I am obsessed with all things coconut. Once I was introduced to full fat coconut milk I was hooked. This soup is so good. I am not typically a fan of leftovers, but I can eat this soup for several days. You can easily make this recipe Whole30 compliant.
Stew is a great comfort food. It is warm and hearty perfect for a cold day when you are stuck inside. We love this recipe because you can prepare all you veggies the night before and in the morning throw it all together. We sometimes skip the pot step and just start everything together in the crock pot. This way when we wake up the stew is ready for us to take with for the day.

I love a good squash soup, but sometimes, they feel a little grainy. Not so with this silky smooth, buttery soup. This is a really easy soup to make and I love that you don’t have to roast the squash first. You can whip this up on a weekday without any problem.
